Ingredients:
The base
- 8 red or green apples
- thumb size piece of ginger, peeled
- fresh apple juice (500ml)
- sprinkle of cinnamon
- drizzle of maple syrup
Topping
- 100g flaked almond
- 120g pumpkin seeds
- 100g chia seeds
- 100g coconut sugar
- 4 tbsp coconut oil melted
- 3 tsp cinnamon
- squeeze maple syrup
- 20g rum (optional)
- 750g apples, peeled
- 80g raisins
Method
Peel the apples, slice thinly and discard the core.
Place the apples and peeled ginger into a saucepan with a shallow layer of apple juice, Bring to the boil and reduce to a simmer for about 10-15 mins until the apples are soft. Drain the liquid.
While the apples are cooking, place almond flakes, pumpkin seeds, chia seeds, coconut sugar, melted coconut oil, maple syrup and cinnamon into a bowl and mix.
When the apple is cooked and drained, transfer to the bottom of an ovenproof dish. Sprinkle it with cinnamon and maple syrup and top with the nut crumble.
This can be made and stored in the fridge for a day or two if necessary.
Bake at 180C for about 10-15 mins, until the crumble is golden and delicious.
Serve with a dollop of coconut yoghurt or ice cream.
