This wonderful vegan recipe for chocolate brownies is not just a great idea for Tu B’Shevat, but is also perfect to be enjoyed any time. No excuse needed!
Makes 20-24 brownies
Ingredients
- 20 dates (medjool best)
- 8 dried figs
- 50g of jumbo oats
- 1 tbsp of chia seeds
- 25g of cocoa powder
- 1 tbsp of nut butter (almond or cashew works fine!)
- 100g of walnuts or pecans (don’t be afraid to mix and match!)
- 1 tbsp of coconut oil
Method
Soak the dates and figs in warm water until soft and then drain them. Make sure to keep the liquid, you might need it later.
blend the pecans/walnuts in a food processor until finely chopped.
Melt the coconut oil and pour it into the processor.
Add the remaining ingredients to the food processor and continue to blend until everything is mixed together. You may need to add some of the liquid from the dates and figs to help the mixture come together into a ball.
Line a tray with baking paper and press the mixture into the tray. Refrigerate for a couple of hours and then cut into cubes once the brownies are solid to the touch.
The brownies can be kept in the fridge or freezer.
