Serves 4
Ingredients
- 8 medium carrots, peeled
- ½ red onion, peeled and sliced
- 100g currants
- 20g parsley, chopped
- 1 red chilli, deseeded and chopped
Dressing:
- 3 tbsp olive oil
- 1 tbsp honey
- 1 tbsp lemon juice
- ¼ tsp sea salt
- pinch ground black pepper
- ½ tsp ground cumin
- ½ tsp ground coriander
Method
Grate the carrots in a food processor, and slice one carrot to give texture.
Mix together with the currants, sliced red onion and chopped chilli
Mix the dressing ingredients and toss with the salad.
Sprinkle with parsley and gently mix through.
Serve immediately or chill in the fridge until required.
