Ingredients
- 2 aubergines
- 2-3 tbsp vegetable oil
- 1 tbsp sesame oil
- 2 tbsp brown miso paste
- 3 tbsp caster sugar
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tsp ginger
- 1 garlic clove, crushed
- 2 spring onions thinly sliced
- 1 red chilli, deseeded and chopped
Method
Preheat the oven to 180C, gas mark 4
Halve the aubergines, lengthways, then use the tip of a very sharp knife to score a diamond pattern on each half of the flesh to make a diamond pattern, about 1cm apart.
Brush each half of the aubergine with sesame oil, season with salt and pepper and roast in the oven for 20-25mins
Remove from the oven and glaze with the ginger and miso mixture. Return to the oven for 10 minutes until the top is bubbling and golden.
Sprinkle over the spring onions, and chopped chillies if desired.
Serve with brown basmati rice.
