A recipe from The Together Plan food lab
Ingredients
- 4 large matzah or 8 pieces of the homemade crackers (broken into small pieces)
- 1 tbsp apples (peeled, cored and grated)
- 90g raisins
- 50g dried chopped apricots
- 55g chopped almonds/walnuts
- 100g sugar
- 1 tsp cinnamon
- 1tbsp honey
- 1 lemon (zest and juice0
- 3 medium eggs (whisked)
- 3 tbsp matzah meal
- 85g butter (melted)
- 2 tbsp granulated sugar
- 2 tbsp marmalade(optional)
Method
- Put the broken matzah in a bowl and cover with water. Drain and mash with a fork.
- Preheat the oven to 180C/350F. Grease an 8/9 inch 0r 24/25cm oblong dish.
- To the mashed matzah add apple, raisins, chopped apricots and nuts. Mix well. Add half the sugar and cinnamon, honey, lemon zest and juice and mix again.
- Beat the eggs with remaining sugar for a few minutes until creamy and the sugar is dissolved. Stir in melted butter and scrape into a baking dish. Level out and scatter over 1 tbsp of sugar.
- Bake for 40-50 (depending on the ferocity of your oven) minutes until a knife inserted into the centre comes out clean and the top is browned and slightly puffed.
- Once baked melt the marmalade in a pan and brush over the top to give a glazed surface. Leave to cool.
Serve with cream or ice-cream!
